About
Who runs this site
Echizen Knife Guide is run by a resident of Fukui Prefecture, Japan. The site is independent. It is not run by any knife maker, shop, or local government body. Some of the shops we link to pay us a commission; see the Affiliate Disclosure.
What this site covers
Guides to Japanese kitchen knives, with a focus on the Echizen knife-making tradition in Fukui Prefecture: how to choose a knife, how to sharpen and store it, and what to check before bringing one home from Japan.
How we write
- We do not describe experiences we have not had. We will not say we tested, compared, or used a product unless we actually did. When an article is based on research rather than hands-on use, it says so.
- No fake reviews or invented people. We do not create testimonials, reviewers, or experts.
- Both sides. When we mention a product, we try to say who it suits and who it does not, including its drawbacks.
- No fixed prices. Prices change, so we do not state them in articles. Please check the current price on the seller’s site.
- Corrections. If you find a mistake, please tell us through the Contact page.
